Handmade Koji is considered to be the beginning of traditional Japanese food culture of
“fermentation”. This Junmai Daiginjo uses polished down Yamadanishiki, Gohyakumangoku, and Miyamanishiki sake rice brewed with spring water from melted snow, the “pure water of the God Raiden”.

Hakkaisan Junmai Daiginjo’s refined sake with its pronounced clarity, clean taste, and elegant, gentle sweetness – will enhance the flavor of any cuisine.
